I like to keep a few of these meals in mind, because in my busy house, someone is always craving something tasty! And most of the time, I'm trying to come up with something delicious that isn't too time-consuming.
Today for lunch, I made a quick & easy sheet pan shrimp scampi with Wildtree's Scampi Blend, and it was love, y'all. My shrimp scampi was soooo good and the scampi blend made seasoning the easiest part of preparing the meal. While browsing the digital weekly meal planner I received from Wildtree, I decided to make the Sheet Pan Shrimp Scampi. Preparation and cooking time looked quick enough to fit time constraints. It combined two of my favorite things- shrimp and pasta. Plus, I could throw some asparagus in the mix to get my veggie fix! Please tell me I'm not the only one that tries to make sure I include at least one vegetable into our family meals, y'all.
All I needed was a pound of raw shrimp, a bunch of asparagus (or whatever your vegetable of choice), 1 lemon, 4 tablespoons of unsalted butter, and 8 ounces of pasta. Add 1 1/2 teaspoons of the Wildtree Scampi blend, and you have yourselves a complete meal, ladies and gentlemen!
Next, I added the shrimp and asparagus to the sheet pan, tossing them with the melted butter and Scampi blend for seasoning. And you guys, the Scampi blend smells so divine!
Then I scattered the lemon slices all over the dish and put it into the oven to bake for 10 minutes.
While the Shrimp Scampi was baking, I boiled 8 ounces of angel hair pasta to pair with it.
I removed this pan of deliciousness from the oven and served it over the angel hair pasta. And when I tell you the Shrimp Scampi had the whole house smelling like an expensive restaurant, please believe me! I didn't have to chop up anything but my asparagus and lemon. And I didn't have to take the time to mix up seasonings in order to make a rich, flavorful meal. It was so yummy, y'all!
